To dress your olives you will need:

  • olives
  • garlic
  • Thyme
  • a bit of salt
  • Water
  • Fennel

Step by Step

Once you have everything, it will be time to get down to work to get some delicious olives. To do this, the first thing you have to do is place them in a container and wash them well with water , especially if they have been collected from trees as they could be dirty.

When they are already very clean, we have to take them to a place where we are not afraid of staining, because what we have to do now is give them a knock to open them . I insist, just one hit, you don’t have to crush them. A glass soda bottle can be used for this, because having a concave base the olive will not fly out.

After that time, and as soon as they have the flavor you like, you will drain all the water and put them in glass jars with a couple of unpeeled garlic cloves, a few pieces of fennel, a few stalks of thyme, a pinch of salt and water. You’ll put the lid on it, and then you’ll just have to wait two to three weeks.
